Big Island Bees are happy and healthy! November 4, 2007

Fortunately, on the Big Island of Hawaii, our bees have been isolated from the many viruses and other ailments that plague honey bees around the world. Our bees can forage freely, gathering nectar from the abundant flora growing year round. Our bees are never fed artificially and therefore the honey they produce is pure and unadulterated.
The bees have just finished gathering nectar from the Wilelaiki Trees. Wilelaiki is the Hawaiian name for Christmas Berry. This organic honey is a beautiful golden orange with a unique flavor. Wilelaiki is a Brazilian pepper tree and the honey it produces has a slight spicey undertone. It is especially delicious when used in savory dishes, such as marinades and dressings. I also have created a chai honey ice cream using Wilelaiki honey. The recipe will be published in the magazine Culinary Trends this winter.
